Sustainable Restaurant Group - What's the Carbon Footprint of a Meal?
What is responsible seafood? As a sushi chain, Sustainable Restaurant Group (SRG) is defining the future of hospitality through a deep commitment to social change, and mindful business decisions that connect environmental impact, the prosperity of its team members and suppliers, and the enrichment of the communities in which it is based.
Greenhouse gas (GHG) emissions and their related climate impacts are a long-standing concern of SRG leadership. Blue Star Integrative Studio was brought in to look throughout the supply-chain and quantify those impacts: farm-level and fishing fleet, transportation from fishery and farm to port to restaurant, refrigeration energy, and energy use at the restaurant. Our role was also in quantifying benefits, identifying the impact of superior action.
The results were integrated into SRG's marketing, transparently showing the footprint related to different types of sourced fish and explaining the actions SRG is taking through its suppliers, processing and purchasing for maximum benefit. We were honored that Fast Company magazine covered our work!
